Can we all just take a minute to relish the fact that it is finally FRIDAY? Personally, I’m downright ecstatic! This past week has been one of those weeks: a Funk week. Yep, that’s officially a thing: a Funk week, with a capital F.
And, in case you were wondering, I am here to confirm that, while ice cream can’t fix everything, it can certainly help a lot of things. I’ve eaten more ice cream in the past week than I typically eat in six months, dare I say a year.
I think we can all agree that a girl’s allowed to drain her sorrows and concerns in a big, bowl of ice cream from time to time. Am I right?!

2 – Not Your Average Ice Cream: Earlier I mentioned that I’ve been on an ice cream kick and now I’m going to tell you about the bizarre flavor that’s been keeping me coming back for more: Golden Milk Ice Cream.
Weird, I know.
You may remember that I recently raved about the benefits of turmeric and shared my favorite Golden Milk recipe. Then, this week my best friend Lindsay over at Seven Layer Charlotte alerted me that Dana from Minimalist Baker had posted a recipe for Golden Milk Ice Cream. I didn’t waste any time testing out the recipe for this slightly unorthodox flavored dessert!
Made with whole fat coconut milk, ground turmeric, fresh ginger, vanilla, and maple syrup, this is not your average ice cream flavor. It is so much more!
Talk about a recipe that will leave your dinner guests bluffed at your culinary creativity…
This coconutty ice cream has depth and character and is oh-so-soothing, making it an (unexpectedly) delicious treat. All it takes is one little bite to make your taste buds perk up and shout, Whoa mama! Why haven’t we been eating this all along!?
And the best part is, it’s super easy to make. If you’re like me and don’t have an ice cream freezer, fear not: Dana provides directions for how to make it in any freezer safe container. Of course, if you go the no ice cream freezer route, it won’t be as creamy as your average ice cream; your finish product will be something between a sorbet and an ice cream. Even so, it will leave you licking your lips and coming back for me!
I followed the original recipe pretty darn closely. I did, however, make a huge mistake: I cut the recipe in half. Why, oh why, didn’t I double it instead?! It’s that good.
Note – Turmeric stains like crazy! Trust me. White leather couch + bowl of Golden Milk Ice Cream = there may or may not be a stain that I very much intend on blaming on the kids!
3 – Hello Spring!: I’m a Carolina girl, so when I think of spring, I think of 70-degree weather. Though le printemps is officially upon us, we here in Toulouse have yet to get a glimpse of those 70-degree days that I’m craving so badly.
With that being said, I loved hearing the birds chirping this week as I walked the kids to school. And, when I crossed over the Canal du Midi and got this view, I couldn’t help but snap a quick pic to celebrate the fact that spring is finally here.
4 – Insta Update: Last week I ranted about Instagram’s plan to start deciding what photos we see in our feed based on their algorithmic calculations. If you missed that post, check it out here. This week, I wanted to let you know that you can opt to receive post alerts for your favorite accounts.
Simply go to the Instagram profile of the person in question and click on those three dots in the upper right-hand corner. A menu will pop up from the bottom with the option to Turn on post notifications. Simply select that option and you’re good to go. You’ll be sure not to miss a single photo from your favorite accounts!

5- Easter Truth: It’s not about the bunny, the colorful eggs, or the gorgeous spring flowers, but rather about the redeeming power of the Cross.
